AJ and I are lovin’ our morning smoothies. This Blueberry Avocado Smoothie has become another one of our regular favorites. I can’t wait to pick and freeze my own berries this summer! The avocado adds a beautiful creamy texture and the mint makes this a refreshing *spa~like* way to start the day:) Surely summer will be here soon!
INGREDIENTS:
(yields 1x 12 oz smoothie)
1 cup organic blueberries, frozen (packed with antioxidants, reduce belly fat, urinary tract health, vision preservation, brain health, reduce constipation, fight cancer)
1/2 cup mint leaves, lightly packed (complexion improvement, cancer prevention, digestion aid)
1 ripe avocado (cancer prevention, eye health, lower cholesterol, heart health, better nutrient absorption, vitamin E)
1 cup orange juice
PREPARATION:
Combine all ingredients in a blender or Vitamix (I’ve been using the blender attachment on our Kenwood Cooking Chef) and blend for 60 seconds or until smooth. Add more Orange Juice to achieve desired consistency.
